According to the NOVA classification system developed by Professor Carlos Augusto Monteiro (who coined the term “ultraprocessed” in 2009), ultraprocessed foods contain little to no whole food ingredients. Instead, they’re manufactured from “chemically manipulated cheap ingredients” and often use “synthetic additives to make them edible, palatable and habit-forming.”

The study estimates that in the United States, where ultraprocessed foods make up nearly 55% of the average diet (the highest level in the world), reducing these foods to zero could have prevented over 124,000 deaths in 2017 alone.

Other research has linked even small increases in ultraprocessed food consumption to:

  • 50% higher risk of cardiovascular disease-related death
  • 55% increased risk of obesity
  • 40% higher risk of developing type 2 diabetes
  • 20% increased risk of depression or early death from any cause
